These are live classes, not prerecorded videos. We'll meet together online, and I'll guide you through each step as we work. Ask questions anytime, get immediate feedback, and learn the techniques behind the recipes—not just the instructions. Whether you're brand new to canning or looking to build on your skills, you'll have a real teacher with you from start to finish.

Learn the fundamentals of water bath canning, pressure canning, and open-kettle canning. We'll cover the history of each method, the equipment you'll need, common safety considerations, and practical steps to help you preserve food with confidence.

Learn how to make jams and jellies from almost anything, including fruits, onions, and peppers. We'll cover both pectin-based recipes and traditional Amish corn flour jams, along with troubleshooting tips for jams that don't set properly. During class, we'll make a batch of jam together so you can see the process from start to finish.

Learn the differences between pickling and fermentation, how to start and maintain healthy ferments, and how to recognize a successful batch. We'll make both sugar and salt brines while discussing when to use each one and the techniques that produce the best results.
